  • 1 pound smoked sausage, sliced
  • 2 cups mixed bell peppers, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth (or vegetable broth for a vegetarian option) Use gluten-free broth if needed
  • 1 can (14.5 oz) diced tomatoes, no salt added Choose seasoned tomatoes for added flavor
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • 1 cup corn (optional, frozen or canned)

Preparation

  • Begin by slicing the smoked sausage into bite-sized pieces. Chop the bell peppers into small chunks and dice the onion. Mince the garlic cloves, ensuring you have all ingredients ready for a seamless cooking experience.

Cooking

  • In a skillet, heat a small amount of oil over medium heat. Sauté the chopped onion and minced garlic until the onion turns translucent, about 3–5 minutes.
  • Transfer the sautéed onions and garlic to your crockpot. Add the sliced smoked sausage, bell peppers, canned diced tomatoes, and corn if using.
  • Pour in the chicken or vegetable broth, then sprinkle the Italian seasoning, salt, and pepper. Use a wooden spoon to mix everything thoroughly.
  • Cover your crockpot with its lid and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  • About 30 minutes before serving, check the thickness of the dish. If you desire a thicker consistency, you may leave the lid off for the duration.
  • Give the dish a taste test and adjust the seasoning as necessary before serving.
  • Ladle the smoked sausage mixture into bowls and serve alongside rice, quinoa, or simply on its own.

Notes

Allow leftovers to cool before transferring to an airtight container. Store in the refrigerator for up to 3–4 days; freeze for longer storage.
