  • 2 cans (15 oz. each) kidney beans, drained

  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Pulled Pork

  • 3 lbs pork shoulder
  • 1 cup BBQ sauce
  • 1 each onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Vegetarian Lasagna

  • 12 each lasagna noodles
  • 3 cups ricotta cheese
  • 2 cups spinach, chopped
  • 4 cups marinara sauce
  • 3 cups mozzarella cheese, shredded
  • 1 tsp Italian seasoning

Sweet Potato Casserole

  • 4 large sweet potatoes, peeled and cubed
  • 1 cup brown sugar
  • 1/2 cup butter, melted
  • 1 cup chopped pecans
  • 1 tsp cinnamon
  • Salt to taste

Creamy Chicken and Rice

  • 2 lbs chicken thighs, boneless and skinless
  • 2 cups chicken broth
  • 1 cup uncooked rice
  • 1 can (10.5 oz.) cream of mushroom soup
  • 1 cup peas and carrots
  • 1 tsp garlic powder
  • Salt and pepper to taste

Preparation

  • Start by washing, peeling, and chopping all necessary ingredients.

Cook the Base

  • For beef chili, brown the ground beef in a skillet until fully cooked. Drain excess fat, then transfer to the crockpot. Add crushed tomatoes, drained kidney beans, chopped onion, minced garlic, chili powder, cumin, salt, and pepper. Stir and cook on low for 6-8 hours.

Pulled Pork Preparation

  • Place pork shoulder in the crockpot. Combine with BBQ sauce, sliced onion, minced garlic, smoked paprika, salt, and pepper. Cook on low for 6-8 hours until it shreds easily.

Lasagna Assembly

  • Layer half of the marinara sauce on the bottom of the crockpot. Add uncooked lasagna noodles followed by a mixture of ricotta cheese, chopped spinach, and mozzarella. Continue layering and finish with mozzarella. Cook on low for 4-6 hours.

Sweet Potato Casserole Prep

  • Combine cubed sweet potatoes with brown sugar, melted butter, chopped pecans, cinnamon, and salt. Mix well, then cook on low for 6 hours.

Creamy Chicken and Rice Assembly

  • Place chicken thighs in the crockpot. Pour in chicken broth, uncooked rice, cream of mushroom soup, peas, carrots, garlic powder, salt, and pepper. Stir and cook on low for 6-8 hours.

Finish and Serve

  • Check the seasoning of each dish and adjust as necessary before serving.
