Liquids and Seasoning

  • 28 ounces canned tomatoes, diced or crushed Use based on your texture preference.
  • 4 cups chicken broth, low-sodium For a vegetarian option, substitute with vegetable broth.
  • 2 teaspoons Italian seasoning Adjust to taste.
  • Salt and pepper to taste Essential for seasoning.

Noodles and Cheese

  • 8 ounces lasagna noodles, uncooked Break into bite-sized pieces.
  • 2 cups shredded mozzarella cheese For a cheesy finish.
  • 15 ounces ricotta cheese Can substitute with cottage cheese.

Preparation

  • In a skillet over medium heat, brown the ground beef and Italian sausage until thoroughly cooked. Crumble the meat as it cooks. Once browned, add in the minced garlic and chopped onion, sautéing until fragrant.
  • Transfer the cooked meat, onion, and garlic mixture into a 6-quart crock pot, scraping any leftover bits from the skillet into the pot.

Cooking

  • Add the canned tomatoes along with their juice and the low-sodium chicken broth into the crock pot. Stir in the Italian seasoning, and season with salt and pepper to taste.
  • Cover the crock pot and set it to cook on low for about 4-5 hours or on high for about 2-3 hours.
  • Approximately 30 minutes before serving, break the lasagna noodles into bite-sized pieces and stir them into the crock pot.
  • Just before serving, gently stir in the ricotta cheese and shredded mozzarella cheese, allowing it to melt before serving.

Notes

Perfect for leftovers; the flavors develop even more the next day. Customize with different meats or go meatless with vegetables.
