  • 1 medium head medium head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika (optional) Adds a smoky flavor
  • ¼ teaspoon red pepper flakes (optional) For added heat
  • 2 tablespoons grated parmesan (optional) Can be omitted for dairy-free option

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and pat dry the cauliflower, cutting it into bite-sized florets.

Mixing

  • In a large bowl, combine the cauliflower florets with olive oil.
  • Add salt, black pepper, garlic powder, smoked paprika, and red pepper flakes; mix until evenly coated.

Roasting

  • Spread the seasoned cauliflower in a single layer on a parchment-lined baking sheet.
  • Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  • If using parmesan, sprinkle it on during the last 5 minutes of roasting.

Serving

  • Remove from the oven and let cool for a couple of minutes. Garnish with fresh parsley or chives, if desired.
  • Serve warm with dips such as ranch, sriracha mayo, or yogurt sauce.

Notes

Store leftovers in an airtight container in the refrigerator for 3-5 days. Reheat in the oven to restore crispiness.
