Preparation

  • Gather all ingredients to ensure everything is ready for the recipe.
  • In a mixing bowl, combine the ricotta cheese, limoncello, and sugar. Stir until smooth.
  • Add the flour, baking powder, and chopped mint to the mixture. Stir until just combined.
  • Crack the eggs into the bowl and gently fold them into the batter.

Cooking

  • Heat oil over medium heat in a frying pan.
  • Drop spoonfuls of the batter into the hot oil, leaving space between each fritter.
  • Fry for 2-3 minutes on each side until golden brown.
  • Remove fritters and place them on paper towels to drain excess oil.
  • Dust with powdered sugar (optional) and serve while warm.

Notes

These fritters can be served with fresh berries, whipped cream, or chocolate sauce. Can be stored in an airtight container for up to 3 days in the refrigerator, or frozen for about a month.
