  • 1 pound gnocchi
  • 2 tablespoons olive oil Can substitute with avocado oil or butter.
  • 4 cups fresh spinach Approximately 120 g.
  • 4 ounces feta cheese, crumbled Approximately 115 g.
  • 2 cloves garlic, minced Can substitute with garlic powder for a milder flavor.
  • to taste Salt
  • to taste Black pepper
  • 1 teaspoon red pepper flakes Optional, for heat.

Preparation

  • Prepare your workspace and gather all the ingredients and tools needed.
  • Fill a large pot with water, add salt, and bring to a rolling boil.
  • Once boiling, add the gnocchi and cook according to the package instructions, generally for 2-3 minutes or until the gnocchi floats.
  • Using a slotted spoon, remove the gnocchi and drain them. Set aside.
  • Heat olive oil in a large frying pan over medium-high heat until hot.

Cooking

  • Add the cooked gnocchi to the pan, allowing them to cook undisturbed for 2-3 minutes until golden brown.
  • Gently stir and continue to cook for another 2-3 minutes to achieve crispiness on all sides.
  • Lower the heat to medium and add the minced garlic, sautéing for about 1 minute until fragrant.
  • Add the fresh spinach to the pan and stir until wilted, about 2-3 minutes.
  • Remove from heat, season with salt, black pepper, and red pepper flakes. Stir in crumbled feta cheese until slightly melted.
  • Serve immediately on plates for the best experience.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for longer storage. Reheat in a frying pan for best results.
