Fritters

  • 1 cup corn kernels Fresh or canned, if using canned, drain and rinse.
  • 1/2 cup all-purpose flour Can substitute with gluten-free flour.
  • 1/4 cup cornmeal
  • 1/4 cup green onions, sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon baking powder
  • Oil for frying About 1/4 inch deep.

Cilantro Cream

  • 1/2 cup sour cream Can substitute with Greek yogurt or plant-based alternative.
  • 2 tablespoons cilantro, chopped
  • 1 tablespoon lime juice

Preparation

  • Gather all your ingredients. Prepare corn by cutting from cob or draining canned corn. Chop green onions and cilantro.

Cooking the Fritters

  • In a mixing bowl, combine corn, flour, cornmeal, green onions, cilantro, baking powder, salt, and pepper. Mix until well combined.
  • In a frying pan, heat oil over medium heat until shimmers. Test with a small amount of batter; if it sizzles, the oil is ready.
  • Drop spoonfuls of corn mixture into hot oil, flattening slightly. Fry for 3-4 minutes on each side until golden brown.
  • Remove fritters with a slotted spatula and place on a paper towel-lined plate to absorb excess oil.

Prepare the Cilantro Cream

  • In a separate bowl, mix sour cream, cilantro, and lime juice until creamy and well combined.

Serving

  • Serve fritters hot with cilantro cream on the side for dipping.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.

Notes

For variations, consider adding jalapeños for spice or cheese for creaminess. Baking them is a healthier alternative.
