For the Chicken Tenders

  • 1 lb chicken breasts or tenders (cut into strips)
  • 2 large eggs (beaten)
  • 1 cup panko breadcrumbs For best texture.
  • 1/2 cup grated Parmesan cheese Optional.
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • as needed Olive oil spray For spraying before baking.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.
  • In one shallow bowl, beat the two eggs for the egg wash.
  • In another bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, onion powder, salt, and black pepper.

Breading the Chicken

  • Dip each chicken strip into the egg wash, coating fully and allowing excess to drip off.
  • Coat the chicken strip with the breadcrumb mixture, pressing gently to ensure adherence.
  • Arrange the breaded chicken strips onto the prepared baking sheet in a single layer.
  • Lightly spray the coated chicken with olive oil.

Baking

  • Bake in the preheated oven for approximately 20 minutes, or until the chicken is golden brown.
  • Check the internal temperature with a meat thermometer; it should reach at least 165°F (75°C).
  • Let the chicken tenders rest for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. To freeze, lay the tenders in a single layer on a baking sheet until solid, then transfer to a freezer-safe bag. They can be frozen for up to three months.
