Preparation

  • Begin by washing the carrots thoroughly. Peel them to remove the outer skin.
  • Cut each carrot in half lengthwise.

Cooking

  • Bring a pot of salted water to a boil. Add the prepared carrots and cook for about 10 minutes until fork-tender.
  • Drain the carrots in a colander and let them sit for a while to let excess water escape.
  • Smash each carrot gently with a fork or a masher until flattened, aiming for rough surfaces.
  • Drizzle with olive oil, and sprinkle salt, pepper, and garlic powder generously over the smashed carrots.
  • Mix gently to ensure all sides are coated well.
  • Line a baking sheet with parchment paper and arrange the smashed carrots in a single layer.
  • Preheat your oven to 425°F and bake the carrots for 20-25 minutes, flipping them halfway through.
  • If using, sprinkle the grated Parmesan cheese over the carrots during the last 5 minutes of baking.
  • Remove from oven once golden and crispy, and let cool slightly before serving.
