Ingrédients
  

For the Salmon

  • 4 pieces wild-caught salmon fillets, 4 to 6 ounces each
  • 2 tablespoons olive oil (for salmon)
  • 2 teaspoons Tuscan spice blend
  • 1 teaspoon sea salt

For the Sauce

  • 1 tablespoon olive oil (for the sauce)
  • 4 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 5 to 6 pieces sun-dried tomatoes, chopped
  • 1 to 2 tablespoons Tuscan spice blend (additional for sauce)
  • 1.5 cups heavy cream
  • 1 cup vegetable or seafood stock
  • 3 tablespoons white cooking wine
  • Juice of ½ pieces lemon
  • 1 cup fresh kale, chopped
  • 1 cup freshly grated Parmesan cheese

Preparation

  • Start by gathering all your ingredients. Pat the salmon fillets dry with a paper towel to ensure they roast well.
  • Drizzle the salmon fillets with 2 tablespoons of olive oil, rub them with the Tuscan spice blend and sea salt.

Cooking the Salmon

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and place the seasoned salmon fillets skin-side down. Roast them on the top rack for 15 to 20 minutes until cooked through.

Making the Sauce

  • While the salmon is roasting, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add minced garlic and sauté for 1 to 2 minutes until fragrant.
  • Stir in the Tuscan spice blend and a pinch of sea salt, followed by tomato paste and chopped sun-dried tomatoes. Cook for about 1 minute.
  • Reduce the heat to medium-low and gradually stir in the heavy cream, vegetable or seafood stock, white cooking wine, and lemon juice. Enable to bubble gently for 1 to 2 minutes.
  • Whisk in the Parmesan cheese and stir until melted and the sauce thickens slightly.
  • Add the chopped kale to the sauce and cook until softened and well incorporated.
  • Once the salmon is roasted, gently place the fillets into the skillet and spoon the creamy sauce over. Simmer for an additional 5 to 6 minutes.

Serving

  • Plate the Creamy Tuscan Marry Salmon with your choice of sides, garnishing with extra Parmesan cheese if desired.

Notes

For best flavor, consider marinating the salmon in olive oil and the Tuscan spice blend for 30 minutes before cooking. Adjust the heat with red pepper flakes if desired.
