  • 4 pieces chicken breasts
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream can substitute with coconut or almond milk for dairy-free
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups spinach
  • 1 teaspoon Italian seasoning

Preparation

  • Gather all your ingredients. Chop the sun-dried tomatoes and mince the garlic.
  • Heat the olive oil in a large skillet over medium heat.

Cooking

  • Season the chicken breasts with salt and pepper. Add them to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through.
  • Once the chicken is cooked, remove it from the skillet and set it aside.
  • Add the minced garlic to the skillet and sauté for about one minute until fragrant.
  • Pour in the chicken broth and deglaze the skillet by scraping any bits from the bottom.
  • Lower the heat and add heavy cream, chopped sun-dried tomatoes, Italian seasoning, and spinach. Stir to combine and let it simmer for 3-5 minutes until the sauce thickens.
  • Return the chicken to the skillet and ensure it's well-coated with the sauce.

Serving

  • Once everything is combined and heated through, serve the Creamy Tuscan Chicken hot and fresh.

Notes

This dish can be served over pasta, rice, or with a salad. For storage, allow to cool, then transfer to a sealed container and refrigerate for up to 3-4 days. It can be frozen for longer preservation.
