Preparation

  • Start by measuring out all your ingredients to streamline the cooking process. Mince the garlic and gather your spices and pasta.

Cooking

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and reserve a bit of the cooking water.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the can of diced tomatoes, including the juice, and stir in the Italian seasoning. Cook for 2-3 minutes.
  • Reduce the heat to low and gradually pour in the heavy cream, stirring consistently. Let the sauce simmer for about 5 minutes to thicken.
  • Add the cooked pasta to the skillet and toss to coat with the sauce.
  • Taste and season with salt and pepper. Add a splash of reserved pasta water if needed for a thinner consistency.
  • Serve hot, garnished with fresh basil and a sprinkle of grated Parmesan.

Notes
