  • 1 lb smoked sausage sliced
  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • salt and pepper to taste
  • fresh parsley chopped, for garnish

Instructions
 

  • Prepare your workspace and gather all ingredients and tools for cooking.
  • Bring a large pot of salted water to a boil and cook the penne pasta until al dente. Reserve 1 cup of pasta water and drain the rest.
  • In a skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 2-3 minutes. Add minced garlic and sauté for 30 seconds.
  • Add sliced smoked sausage and cook for 5-7 minutes until browned and caramelized.
  • Pour in chicken broth and heavy cream, stirring to combine. Simmer gently to blend flavors.
  • Stir in mozzarella cheese until melted and creamy. Adjust consistency with reserved pasta water if needed.
  • Add cooked pasta to the skillet and toss to coat evenly in the sauce.
  • Season with Italian seasoning, paprika, salt, and pepper. Stir well to combine.

Notes

For a lighter version, substitute half-and-half for heavy cream or use Greek yogurt. Add vegetables like spinach or bell peppers for extra flavor and nutrition.
