Instructions
Preparation
Gather all your ingredients. Ensure your shrimp are peeled and deveined.
Chop your potatoes into even chunks for uniform cooking.
Cooking the Potatoes
Boil salted water in a large pot. Once boiling, add the chunked potatoes.
Cook potatoes for about 15 minutes until fork-tender.
Making Mashed Potatoes
Drain the cooked potatoes and return them to the pot.
Add 2 tablespoons of butter, ½ cup of heavy cream, and ¼ cup of milk.
Mash until smooth, seasoning with salt and pepper. Keep warm.
Cooking the Shrimp
In a skillet, heat 2 tablespoons of olive oil over medium heat.
Season shrimp with salt and pepper, then add to the skillet.
Sauté shrimp for 2-3 minutes on each side until pink and opaque.
Set aside on a plate.
Making the Sauce
In the same skillet, lower the heat and melt the remaining 2 tablespoons of butter.
Add minced garlic and sauté for about 1 minute until fragrant.
Pour in 1 cup of heavy cream and ½ cup of chicken broth.
Let it simmer for 3-4 minutes until it thickens slightly.
Mix in ¼ cup of grated Parmesan cheese until melted and smooth.
Combining Ingredients
Return cooked shrimp to the skillet, tossing them in the sauce for 1 minute.
Serving
On each plate, serve a generous portion of creamy mashed potatoes.
Top with shrimp and sauce, garnishing with fresh parsley.
Notes
For best results, use fresh shrimp and adjust seasoning to taste. Leftovers can be stored for up to 3 days.
