  • 1 can (15 oz) corn, drained
  • 1 cup heavy cream
  • 1 cup shredded cheese cheddar or your choice
  • 1/2 cup diced onion
  • 1/4 cup butter melted
  • 1/2 cup breadcrumbs
  • 1/2 tsp garlic powder
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a baking dish with butter or cooking spray.
  • In a mixing bowl, combine drained corn, heavy cream, shredded cheese, diced onion, melted butter, garlic powder, salt, and pepper.
  • Stir the mixture until everything is well incorporated and creamy.
  • Pour the mixture into the greased baking dish and spread evenly.
  • Sprinkle breadcrumbs evenly on top. Add extra cheese on top if desired for more richness.
  • Bake for 30–35 minutes, until the top is golden brown and the edges are bubbly.
  • Remove from the oven and let it cool for 5–10 minutes before serving.
  • Serve warm, garnished with herbs or extra cheese. Enjoy!

Notes

For a spicy version, add diced jalapeños or pepper jack cheese. To make it gluten-free, use almond flour or gluten-free breadcrumbs. Leftovers can be refrigerated for 3–4 days or frozen for up to 2 months.
