  • 12 large large eggs, hard-boiled and peeled
  • cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon white vinegar
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon paprika (smoked paprika recommended for richer flavor)
  • Optional: finely chopped chives or fresh parsley for garnish

Preparation

  • Gather all of your ingredients. Ensure eggs are hard-boiled, peeled, and cooled.
  • Place the eggs in a large pot, cover with cold water, and bring to a boil over high heat. Once boiling, cover and remove from heat, letting them sit for 12 minutes.
  • Transfer the eggs to an ice water bath for 5 minutes to cool quickly.
  • Once cooled, tap the eggs gently to crack the shells and peel them under running water. Slice the eggs in half lengthwise.

Prepare the Filling

  • Remove the yolks from the whites and place them in a mixing bowl. Keep the whites intact on a serving platter.
  • Mash the yolks until crumbly, then mix in mayonnaise, Dijon mustard, white vinegar, salt, and pepper until smooth and creamy.

Assembly

  • Fill the egg whites with the yolk mixture using a spoon or piping bag.
  • Sprinkle paprika on top for garnish, and add chives or parsley if desired.
  • Chill in the refrigerator for at least 20 minutes before serving.

Notes

You can prepare these deviled eggs ahead of time and store them in an airtight container for up to three days. Adjust seasonings to taste and consider experimenting with different toppings.
