Ingrédients
  

  • 8 oz Pasta of choice spaghetti, penne, or fettuccine
  • 2 Onions large, thinly sliced
  • 2 tbsp Butter or olive oil
  • 1 cup Parmesan cheese grated
  • 1 cup Heavy cream or vegan substitute
  • Chili oil to taste, optional
  • Salt to taste
  • Black pepper to taste, freshly ground
  • Fresh herbs parsley or thyme, for garnish

Instructions
 

  • Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain (do not rinse).
  • In a large skillet, heat butter or olive oil over medium heat. Add the thinly sliced onions and cook slowly on medium-low heat for 15–20 minutes, stirring occasionally, until deeply golden and caramelized.
  • In a small bowl, mix the heavy cream and grated Parmesan cheese. Season with salt, pepper, and a drizzle of chili oil if desired.
  • Add the cooked pasta to the caramelized onions in the skillet. Pour in the cream mixture and toss to coat. Add a splash of the reserved pasta water to adjust consistency if needed.
  • Heat through on low heat for 2–3 minutes until the sauce thickens and clings to the pasta. Taste and adjust seasoning.
  • Serve immediately, garnished with fresh herbs, extra Parmesan, and a drizzle of chili oil. Enjoy your creamy caramelized onion pasta warm!

Notes

For variation, add sautéed mushrooms, spinach, or grilled chicken. Use coconut or cashew cream for a vegan version, and gluten-free pasta if needed. Leftovers keep 3 days in the fridge; reheat gently with a splash of cream or water.
