  • 4 large potatoes, diced
  • 1 cup heavy cream Can substitute with coconut milk or half-and-half.
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth Can substitute with chicken broth.
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 bunch green onions for garnish

Preparation

  • Wash and peel the potatoes, then dice them into evenly sized cubes.
  • Chop the onion finely and mince the garlic cloves.

Cooking the Soup

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onions and minced garlic, sautéing for 3-5 minutes until translucent.
  • Add the diced potatoes and Cajun seasoning. Stir well and sauté for another 2 minutes.
  • Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 15-20 minutes until the potatoes are tender.
  • Mash some of the soup's contents with a potato masher for a creamy texture.
  • Stir in the heavy cream and heat through without boiling.
  • Adjust seasoning with salt and pepper to taste.
  • Ladle soup into bowls and garnish with chopped green onions.

Notes

For optimal flavor, allow the soup to sit for a day in the fridge. It can be stored for 3-4 days in airtight containers and also freezes well.
