  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup orange juice freshly squeezed yields the best flavor
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon orange zest

Fruits

  • 1 cup fresh cranberries you can use dried cranberries if needed
  • sparkling sugar for topping
  • additional cranberries for decoration

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • Gather and measure out all your ingredients.

Mixing

  • In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together the wet ingredients: orange juice, vegetable oil, eggs, and orange zest.
  • Pour the wet mixture into the bowl with the dry ingredients and stir gently until just combined.

Adding Cranberries

  • Fold in the fresh or dried cranberries into the batter.

Baking

  • Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Sprinkle the top with sparkling sugar and bake for 60-70 minutes or until a toothpick comes out clean.

Cooling

  • Remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack.

Serving

  • Once cooled, slice the bread and enjoy it warm with butter or a glaze.
  • Optionally, top with additional cranberries for decoration.

Notes

Wrap the bread tightly in plastic wrap or store in an airtight container. It keeps fresh for up to three days at room temperature.
