Pork and Glaze Ingredients

  • 1 piece pork tenderloin Lean cut of pork
  • 1 cup fresh cranberries Or frozen, thawed and drained
  • 1/2 cup orange juice Freshly squeezed is best
  • 1/4 cup honey Can substitute with maple syrup
  • 1 tablespoon soy sauce Use gluten-free tamari for GF option
  • 1 tablespoon olive oil For searing
  • to taste salt and pepper For seasoning

Instructions
 

Preparation

  • Gather all ingredients and preheat the oven to 400°F (200°C).
  • Season the pork tenderloin generously with salt and pepper.

Cooking

  • In a skillet, heat the olive oil over medium-high heat and sear the pork on all sides until browned, about 3-4 minutes per side.
  • In a saucepan, combine cranberries, orange juice, honey, and soy sauce. Bring to a gentle boil, stirring occasionally, for about 10 minutes until cranberries burst and sauce thickens.
  • Pour the cranberry glaze over the seared pork tenderloin and transfer the skillet to the preheated oven.
  • Bake for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  • Let the pork rest for a few minutes after removing it from the oven.
  • Slice the pork tenderloin into medallions and drizzle with remaining glaze before serving.

Notes

Can be served warm or at room temperature. Great for making ahead of time.
