  • 1 cup unsalted butter, melted
  • 1/2 cup granulated sugar Can be substituted with honey or maple syrup.
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can be substituted with gluten-free flour.
  • 1/2 teaspoon salt

For the cranberry filling

  • 2 cups fresh or frozen cranberries Fresh preferred, but frozen can be used without thawing.
  • 1/2 cup orange juice

For the glaze

  • 1/2 cup powdered sugar
  • 1 tablespoon milk Can use almond milk for a dairy-free option.

Preparation

  • Gather all your ingredients and preheat the oven to 350°F (175°C). Grease a 9x9-inch baking pan.

Making the Base

  • In a mixing bowl, combine the melted butter, granulated sugar, brown sugar, and vanilla extract. Mix until creamy.
  • Add flour and salt to the mixture and stir gently until combined, maintaining some crumbs for texture.
  • Press three-quarters of the dough into the bottom of the prepared pan to form an even base.

Preparing the Filling

  • In another bowl, combine cranberries with orange juice.
  • Spoon the cranberry mixture over the crust, covering it thoroughly.

Finishing Touches

  • Crumble the remaining dough over the cranberry layer.
  • Bake in the oven for 25 to 30 minutes, or until the top is golden brown.
  • Cool the bars in the pan after baking.
  • Prepare the glaze by whisking powdered sugar and milk, then drizzle it over the cooled bars.

Notes

For added flavor, incorporate citrus zest or nuts into the mixture. These bars can be refrigerated for up to a week and freeze well for longer storage.
