Chutney Base

  • 2 cups fresh cranberries Rinse and remove bruised or soft berries.
  • 2 medium apples, peeled and diced Diced for even cooking.
  • 1 cup sugar Can substitute with honey or sugar alternative.
  • 1/2 cup apple cider vinegar
  • 1/2 cup finely chopped onion Can substitute with shallots or omit if sensitive.
  • 1/4 cup raisins

Spices

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • to taste Salt Enhances sweetness and flavor.

Instructions
 

Preparation

  • Gather all your ingredients. Rinse the cranberries and remove any that are bruised or soft. Peel and dice the apples into small pieces.
  • Finely chop the onion and measure out all spices and measurements ahead of time.

Cooking

  • Combine the cranberries, diced apples, sugar, and apple cider vinegar in a large pot. Stir well to ensure even distribution.
  • Place the pot over medium heat and bring the mixture to a boil, stirring frequently.
  • Once boiling, add the finely chopped onion and raisins to enhance flavor and texture.
  • Sprinkle in the ground cinnamon, ginger, and cloves. Stir until well combined.
  • Reduce heat to low and let the chutney simmer for about 20 to 30 minutes, stirring occasionally.
  • When the cranberries have burst and the chutney has thickened, season with salt to taste.

Cooling and Storing

  • Remove from heat and allow the chutney to cool, which will thicken further.
  • Transfer the chutney into clean jars and seal tightly.
  • Refrigerate the jars for up to a month or freeze for longer storage.

Notes

For variations, consider adding jalapeños for heat or nuts for crunch. Store in airtight containers to maintain freshness. Can be made vegan by using plant-based sweeteners.
