  • 2 cups cooked chicken, shredded
  • 1 package gnocchi (16 oz) Use gluten-free gnocchi for a gluten-free option.
  • 1 cup cream cheese Can substitute with dairy-free cream cheese for a lactose-free option.
  • 1 cup chicken broth Use vegetable broth for a vegetarian option.
  • 1 cup shredded cheddar cheese Optional, for garnishing.
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Preparation

  • Gather all your ingredients. Shred your cooked chicken if you haven’t already.

Cooking the Gnocchi

  • In a large pot, cook the gnocchi according to package instructions (about 2-3 minutes or until they float). Drain and set them aside.

Sautéing Garlic

  • In a separate pan, heat a little oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned.

Making the Sauce

  • Add shredded chicken to the pan, followed by cream cheese and chicken broth. Stir continuously until the cream cheese melts completely.

Combining Ingredients

  • Once the sauce is smooth, add cooked gnocchi and frozen peas. Stir gently to combine and coat.

Seasoning

  • Sprinkle in Italian seasoning, salt, and pepper. Adjust seasoning to taste.

Heating Through

  • Continue to cook for an additional 3-5 minutes until heated through and peas are tender.

Serving

  • Serve immediately, topped with shredded cheddar cheese if desired.

Storing Leftovers

  • Cool to room temperature before placing in an airtight container in the refrigerator. Consume within 3-4 days.

Notes

For extra flavor, add a splash of lemon juice before serving. Fresh herbs like parsley or basil can enhance the dish.
