Preparation

  • Gather and measure all the ingredients. Drain and rinse the black beans and corn, then chop the tomatoes, jalapeños, red onion, and cilantro.
  • In a large mixing bowl, combine the softened cream cheese with the shredded cheddar cheese. Mix until well blended and creamy.
  • Fold in the black beans, corn, diced tomatoes, red onion, jalapeños, and cilantro until evenly incorporated.
  • Add lime juice, garlic powder, and cumin. Season with salt and pepper to taste, mixing until everything is well combined.
  • Shape the mixture into a tightly formed ball using your hands.
  • Wrap the shaped cheese ball tightly in plastic wrap and refrigerate for at least 2 hours, or until firm.
  • Once chilled, carefully unwrap the cheese ball. Garnish with additional cilantro or jalapeños if desired.
  • Transfer to a serving platter and serve with tortilla chips or crackers.
  • Pair with drinks like iced tea or light beer for a complete experience.

Notes

Store wrapped tightly in plastic wrap in the refrigerator for 3-5 days. Can be frozen for up to two months. To elevate flavor, consider roasting jalapeños beforehand.
