  • 6 large whole eggs Or use 12 large egg whites.
  • 1 cup cottage cheese
  • 1 cup chopped vegetables E.g., bell peppers, spinach, onions.
  • to taste salt and pepper
  • 1 tbsp olive oil or butter For cooking.

Preparation

  • Gather all your ingredients. Chop the vegetables finely and set aside.
  • If using whole eggs, crack them into a bowl, or measure out egg whites.

Cooking

  • In a bowl, whisk the eggs together with the cottage cheese, chopped vegetables, salt, and pepper. The mixture should be creamy and slightly chunky.
  • In an oven-safe skillet, heat a tablespoon of olive oil or butter over medium heat until melted.
  • Carefully pour the egg mixture into the skillet; it should sizzle slightly.
  • Cook the frittata on the stovetop for about 5–7 minutes until the edges begin to set.
  • Turn off the stove and transfer the skillet to a preheated oven at 350°F (175°C). Bake for approximately 15–20 minutes.
  • The frittata is ready when the center is firm and the top is lightly golden; test doneness with a knife.
  • Allow the frittata to cool slightly for around 5 minutes before slicing.
  • Using a sharp knife, cut the frittata into wedges and serve hot, optionally garnished with fresh herbs.

Notes

You can customize the vegetables used in this frittata according to what's in season or available in your fridge. Leftovers keep well in the fridge for up to 4 days or can be frozen for up to 2 months.
