Preparation

  • Gather all your ingredients. Dice the vegetables as desired and chop any cooked meats if using.
  • Preheat a non-stick oven-safe skillet over medium heat and add a touch of olive oil to coat the bottom.

Mixing

  • In a large bowl, whisk together the eggs and cottage cheese until combined.
  • Add the mixed vegetables and season with salt and pepper to taste.
  • If using cooked meat, fold it into the mixture.

Cooking

  • Pour the egg and vegetable mixture into the heated skillet, distributing it evenly.
  • Cook on the stovetop for about 5 minutes until the edges start to set.
  • Transfer the skillet to the preheated oven at 350°F (175°C) and bake for 15-20 minutes until fully set and lightly golden.

Serving

  • Remove the skillet from the oven and let it cool slightly before slicing.
  • Serve warm, garnished with fresh herbs if desired.

Notes

Store any leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or oven.
