  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1/2 cup chopped spinach
  • 1/4 cup diced bell pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation

  • Start by collecting all your ingredients. Measure out your cottage cheese, eggs, cheese, spinach, bell pepper, salt, and pepper.
  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, blend your cottage cheese and eggs until you achieve a smooth consistency.
  • Add the shredded cheese, chopped spinach, diced bell pepper, salt, and black pepper to the mixture. Stir well to combine all ingredients evenly.
  • Lightly grease a muffin tin with cooking spray.
  • Carefully pour the mixture into the muffin tin, filling each cup about 3/4 full.
  • Place the muffin tin in the preheated oven and bake for 20–25 minutes.
  • Once baked, remove the muffin tin from the oven and let the egg bites cool for a few minutes.
  • Using a small spatula or knife, carefully loosen the edges and remove the cottage cheese egg bites from the tin.
  • Enjoy while warm or allow to cool completely before storing for later enjoyment.

Notes

For a dairy-free alternative, use dairy-free cheese or silken tofu. You can also adjust vegetables to include favorites or seasonal produce.
