Main Ingredients

  • 2 cups fresh corn kernels Sweet and crunchy, they’re the base of the salad.
  • 2 cups cherry tomatoes, halved Their juiciness complements the other ingredients perfectly.
  • 1 cup feta cheese, crumbled Adds a creamy and salty flavor that brings the salad together.
  • 1/4 cup red onion, finely chopped Offers a slight crunch and sharpness that brightens the dish.
  • 1/4 cup fresh basil, chopped Provides a fresh herbaceous note enhancing the overall flavor.
  • 2 tablespoons olive oil Essential for the dressing, adding richness and depth.
  • 1 tablespoon balsamic vinegar A tangy element balancing the sweetness of the corn and tomatoes.
  • Salt and pepper to taste Enhances all the flavors and ensures a well-seasoned dish.

Instructions

Preparation

  • Start by gathering all your ingredients. Wash the cherry tomatoes and basil thoroughly. If using fresh corn, shuck it and remove the kernels from the cob.
  • If using fresh corn, steam or boil it until tender, about 3-5 minutes. Grilling the corn adds a delightful smoky flavor. Once done, let it cool before adding to the salad.
  • Chop the red onion and basil. Halve the cherry tomatoes right before combining to keep them fresh.
  • Crumble the feta cheese into small pieces. Use your hands or a fork to ensure it's evenly crumbled.

Mixing

  • In a large bowl, combine the corn, cherry tomatoes, red onion, and basil. Mix gently to blend the ingredients without smashing the tomatoes.
  • In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined. Taste and adjust the seasoning as necessary.
  • Pour the dressing over the salad mixture. Toss gently until everything is evenly coated, being careful not to break up the tomatoes.
  • For best results, let the salad sit for about 10 minutes to allow the flavors to meld.
  • Serve the salad immediately as a refreshing companion for grilled meats or enjoy it on its own.

Storage

  • If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. It's best enjoyed fresh.
  • For optimal freshness, keep the dressing separate until just before serving.

Notes

Consider adding avocado for creaminess or jalapeños for some heat. This salad is inherently gluten-free.
