Preparation

  • Gather and prepare all ingredients: chop the onion, mince the garlic, grate the ginger, slice the carrots, and chop the bell peppers.

Cooking the Base

  • In a large pot, heat some oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions become translucent and fragrant, about 3-4 minutes.
  • Introduce the sliced carrots and chopped bell peppers. Stir and let cook for another 5 minutes.
  • Stir in the curry powder and cook for about 1 minute to toast the spices.
  • Add the can of coconut milk and vegetable broth to the pot. Stir well and bring to a gentle simmer.

Preparing Dumplings

  • In a separate bowl, combine the flour, baking powder, salt, and pepper. Gradually mix in the water until combined, forming a soft dough.

Cooking Dumplings

  • Once the soup is simmering, drop spoonfuls of the dumpling dough into the liquid, spacing them out.
  • Cover the pot and let the dumplings cook in the simmering soup for about 10 minutes.
  • Stir in the spinach and cook for an additional 2 minutes until wilted.
  • Taste the soup and season with salt and pepper as needed, then serve hot.
