  • 2 tablespoons blue cheese Crumble before adding
  • 2 slices bacon Cook until crisp and crumble

  • 1 tablespoon chives Finely chopped, optional for garnish

Preparation

  • Gather all your ingredients. Ensure bacon is cooked crispy and crumbled. Separate egg yolks from the whites, placing them in different bowls.
  • Preheat your oven to 200°C and line a baking sheet with parchment paper.

Whipping and Baking

  • In the bowl with egg whites, add a pinch of sea salt. Whisk or use an electric mixer to beat the egg whites until stiff peaks form (about 3-5 minutes).
  • Gently fold in crumbled blue cheese and most of the crumbled bacon, being careful not to deflate the whipped egg whites.
  • Spoon the mixture onto the baking sheet, creating two mounds. Make a well in the center of each for the egg yolks.
  • Bake in the preheated oven for 3 minutes or until just set and slightly golden.
  • Carefully slide one egg yolk into each well created earlier.
  • Return to the oven and bake for an additional 3-4 minutes until yolks are set but still runny.

Serving

  • Remove from the oven and garnish with the remaining crumbled bacon, freshly ground black pepper, and chives if using.
  • Serve immediately to enjoy the best texture and flavor.

Notes

Consider using feta or goat cheese as substitutes for blue cheese. For a vegetarian option, crispy mushrooms or sun-dried tomatoes can replace bacon.
