  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon ground cloves

Wet Ingredients

  • 0.75 cups canned pumpkin puree Unsweetened applesauce can be used as a lighter alternative.
  • 0.5 cup vegetable oil Melted coconut oil or applesauce can be used to reduce oil content.
  • 2 large eggs To make vegan, replace with 1/2 cup of unsweetened applesauce.
  • 0.25 cup milk Use almond milk or oat milk for a dairy-free version.
  • 1 teaspoon vanilla extract

Topping

  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter or oil, then dust it lightly with flour.
  • Gather all your ingredients.

Mix Dry Ingredients

  • In a large mixing bowl, whisk together all dry ingredients: flour, both sugars, baking soda, baking powder, salt, and spices.

Prepare Wet Ingredients

  • In another bowl, combine pumpkin puree, vegetable oil, eggs, milk, and vanilla. Whisk until smooth.

Combine Mixtures

  • Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix.

Bake

  • Transfer the batter to the prepared loaf pan. Mix the topping ingredients together and sprinkle over the batter.
  • Bake for 55-65 minutes. Check for doneness with a toothpick.

Cool

  • Let the bread rest in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Serving

  • Once cool, slice and serve as desired, perhaps with butter or cream cheese.
