  • 1 large egg
  • ½ cup unsalted butter, melted Can substitute with coconut oil for dairy-free option.
  • ¼ cup honey Maple syrup or agave nectar can be used as a vegan alternative.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can use whole wheat flour or gluten-free blend.
  • 1 cup light brown sugar, packed Coconut sugar can be a lower-GI substitute.
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon, divided
  • 3 tablespoons granulated sugar (for topping)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease an 8×8-inch baking pan or line it with parchment paper.
  • In a medium bowl, whisk together the melted butter and brown sugar until smooth.
  • Add the egg, honey, and vanilla extract; whisk until well combined.
  • In another bowl, mix together the all-purpose flour, salt, and ½ teaspoon of cinnamon.
  • Slowly fold the dry mixture into the wet ingredients using a spatula until just combined.
  • Pour the batter into the prepared pan and spread evenly.
  • Mix the granulated sugar with the remaining ½ teaspoon of cinnamon and sprinkle over the top of the batter.
  • Bake for 22-25 minutes or until a toothpick inserted comes out clean.
  • Cool completely in the pan before lifting out and slicing into squares.

Notes

To enhance flavor, consider adding nuts or using fresh ingredients. Refrigerate in an airtight container for up to a week or freeze for three months.
