  • 1 cup butter Softened
  • 1 cup dried fruits (e.g., raisins, cranberries, apricots) Chopped
  • 1 cup mixed nuts (e.g., walnuts, pecans, almonds) Chopped
  • 1 cup sugar
  • 2 cups flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions
 

Preparation

  • Measure out all ingredients and chop the dried fruits and nuts.
  • Preheat the oven to 350°F (175°C) and grease a baking dish.
  • In a large bowl, cream together the softened butter and sugar until smooth and fluffy.
  • Beat in the eggs, one at a time, and stir in the vanilla extract.
  • Combine the flour, baking powder, and salt in a separate bowl.
  • Gradually stir the dry mixture into the wet mixture until just blended.
  • Fold in the prepared dried fruits and mixed nuts.
  • Spread the batter evenly into the prepared baking dish.

Baking

  • Bake for 30-35 minutes or until golden brown.
  • Allow to cool in the baking dish before cutting into squares.

Serving

  • Once cooled, cut into squares and serve.

Notes

Store in an airtight container at room temperature for up to one week or refrigerate for up to two weeks. Freeze for up to three months, thaw overnight in the refrigerator.
