  • 1 teaspoon vanilla extract

Preparation

  • Gather all ingredients and equipment. Prepare a baking sheet lined with parchment paper.
  • In a medium saucepan, combine peanut butter, honey, and salt. Heat over low heat, stirring for 3-5 minutes until smooth.
  • Remove from heat, stir in vanilla extract.
  • Place cornflakes in a large bowl and pour the warm peanut butter mixture over them. Gently fold to coat.
  • Melt chocolate chips in microwave in 30-second intervals, stirring until smooth.
  • Drizzle melted chocolate over the cornflake mixture and gently fold until combined.
  • Scoop the mixture and form into 1-inch balls, placing them on the prepared baking sheet.
  • Refrigerate for at least 30 minutes until firm.
  • Serve immediately or store in an airtight container in the refrigerator.

Notes

These bites can be customized with add-ins like chopped nuts or coconut. They are perfect for parties or as an after-school snack.
