Instructions
 

Preparation

  • Start by gathering all your ingredients on the countertop. Wash and grate the zucchini and set it aside.
  • Preheat your oven to 350°F (175°C).
  • Grease a loaf pan with vegetable oil or cooking spray.

Mixing

  • In a large mixing bowl, whisk together honey, vegetable oil, eggs, and vanilla extract until well combined.
  • Stir in the grated zucchini gently.
  • In a separate bowl, mix together whole wheat flour, baking powder, baking soda, salt, and cinnamon.
