Preparation

  • Gather all ingredients including eggs, mayonnaise, Dijon mustard, truffle oil, and chives.
  • Hard boil the eggs by placing them in a pot covered with cold water. Bring to a boil, cover, and turn off the heat. Let sit for 12-14 minutes.
  • Transfer the eggs to an ice bath for about 5 minutes to cool and ease peeling.
  • Gently tap each egg on a hard surface and roll to crack the shell, then peel starting from the wider end.
  • Cut the peeled eggs in half lengthwise, carefully scoop out the yolks, and place them in a mixing bowl.

Making the Filling

  • To the bowl with yolks, add mayonnaise, Dijon mustard, truffle oil, chopped chives, and season with salt and pepper. Mash until creamy.
  • Fill each egg white half with the yolk mixture using a spoon or piping bag.
  • Garnish with chive blossoms for extra color and flavor.
  • Chill in the refrigerator for at least 30 minutes before serving to enhance flavor.
