  • 2 stalks green onions, chopped For freshness and crunch.

Preparation

  • Gather all your ingredients. Have your rice cooked and cooled, preferably day-old rice.
  • Mince the garlic and chop the green onions to have everything ready for quick cooking.

Cooking

  • In a large pan, heat the chili oil over medium heat until hot but not smoking.
  • Add the minced garlic to the hot oil and sauté for 1-2 minutes until golden brown, stirring frequently.
  • Add the cooked rice to the pan, breaking up any clumps with a spatula.
  • Stir gently for about 2 minutes to coat rice with oil and garlic.
  • Pour in the soy sauce and stir well to combine, ensuring every grain of rice is coated.
  • Drizzle sesame oil and stir for another minute.
  • Taste your rice and add salt as needed.
  • Toss in the chopped green onions and stir one last time.
  • Serve hot from the pan, garnished with additional green onions or sesame seeds if desired.
