  • 2 cups sweet potatoes peeled and cubed
  • 2 chicken breasts boneless, skinless
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • salt and black pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cup fresh greens spinach or mixed greens
  • avocado slices optional

Instructions
 

  • Preheat oven to 400°F (200°C). Toss sweet potato cubes with half of the olive oil, salt, and pepper, then spread on a baking sheet.
  • Roast sweet potatoes for 25–30 minutes, stirring halfway, until tender and lightly browned.
  • Season chicken breasts with paprika, garlic powder, salt, and pepper.
  • Heat remaining olive oil in a skillet over medium heat. Cook chicken for 6–7 minutes per side, until fully cooked. Rest briefly, then slice.
  • Assemble bowls with rice or quinoa, roasted sweet potatoes, sliced chicken, and fresh greens.
  • Top with avocado slices if desired and serve warm.

Notes

This bowl is great for meal prep and can be customized with sauces like tahini, yogurt dressing, or vinaigrette.
