  • 8 oz pasta (your choice: fettuccine, penne, or spaghetti)
  • 2 pieces chicken breasts, sliced
  • 1 cup mushrooms, sliced (cremini or button mushrooms work well)
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • to taste salt and pepper
  • 1/4 cup parsley, chopped (for garnish)

Preparation

  • Gather all your ingredients: slice the chicken breasts and mushrooms, and chop the parsley.

Cooking Pasta

  • In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

Cooking Chicken

  • In a large skillet, heat olive oil over medium heat. Sauté sliced chicken for about 5 minutes until browned and cooked through. Remove and set aside.

Cooking Mushrooms

  • In the same skillet, add sliced mushrooms and cook for 4-5 minutes until tender. Stir in minced garlic and cook for another minute.

Making Sauce

  • Pour in the Marsala wine, scraping browned bits off the skillet, and simmer for 2-3 minutes.
  • Add chicken broth and simmer for about 5 minutes.

Final Assembly

  • Return the cooked chicken to the skillet along with the drained pasta. Toss everything together and season with salt and pepper to taste.
  • Garnish with chopped parsley and serve immediately.

Notes

You can customize this dish by adding extra vegetables or switching the protein. For a creamy version, add heavy cream to the sauce.
