  • 4 cloves garlic, minced

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 teaspoon thyme

For the Mashed Potatoes

  • 4 large potatoes, peeled and cubed Use Russet or Yukon Gold for best results.
  • 1/2 cup milk Can substitute with almond milk for a dairy-free version.
  • 1/4 cup sour cream Use dairy-free sour cream as an alternative.

Preparation

  • Begin by gathering all your ingredients.

Cooking the Chicken

  • In a skillet over medium heat, add olive oil and melt the butter.
  • Add the chicken thighs and cook for 5-7 minutes on each side until golden brown. Remove and set aside.

Making the Gravy

  • In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant.
  • Pour in the chicken broth and add thyme, salt, and pepper. Simmer for about 5 minutes.
  • Return chicken thighs to the skillet, cover, and let simmer for 15-20 minutes.

Preparing the Mashed Potatoes

  • In a separate pot, boil salted water and add cubed potatoes. Cook until tender, about 15-20 minutes.
  • Drain potatoes, add milk and sour cream, and mash until smooth. Season with salt and pepper.

Serving

  • Plate the mashed potatoes and top with chicken and garlic gravy.

Notes

For best flavor, use quality chicken broth. Stir in fresh herbs for a more fragrant dish.
