Preparation

  • Begin by gathering all your ingredients. Slice the chicken breast, bell pepper, and onion to ensure everything cooks evenly. Additionally, drain the black beans and corn, and have your rice ready to go.

Cooking

  • Heat the olive oil in a large pan over medium heat. Once it’s hot, add the sliced chicken breast. Cook for about 5-7 minutes or until the chicken is browned on all sides.
  • Once the chicken is nicely cooked, add the sliced bell pepper and onion to the pan. Stir-fry the vegetables for about 3-4 minutes until they’re softened and vibrant.
  • Stir in the fajita seasoning, black beans, and corn. Mix everything well so that the flavors meld together. Cook for another 5 minutes, allowing all ingredients to heat through.

Assembly

  • Prepare serving bowls by placing a generous portion of rice at the base. Spoon the chicken and vegetable mixture over the rice, ensuring everyone gets a colorful mix.
  • Top each bowl with slices of fresh avocado and a squeeze of lime juice. The lime will brighten up the flavors and add a zesty touch.
