  • 1 cup enchilada sauce Store-bought or homemade can be used.
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend) Mixing different cheeses can enhance flavor.
  • 8 pieces corn tortillas For gluten-free, ensure tortillas are labeled as such.

Additional Ingredients

  • 1/2 cup chopped onions Adds sweetness and depth of flavor.
  • 1/2 cup sour cream Can be substituted with dairy-free alternatives.
  • 1 tablespoon olive oil For sautéing the onions.
  • 1 teaspoon ground cumin Enhances the flavor profile.
  • 1/2 teaspoon garlic powder Can be swapped for freshly minced garlic.

Instructions
 

Preparation

  • Gather all your ingredients. Shred the cooked chicken, chop the onions, and set aside cheese and enchilada sauce.

Cooking the Base

  • In a pan over medium heat, warm the olive oil. Add chopped onions, cooking until translucent, about 3-4 minutes. Mix in shredded chicken, ground cumin, and garlic powder; cook for an additional 5 minutes.

Tortilla Preparation

  • Heat tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.

Filling the Tortillas

  • Place some chicken mixture at one end of a warmed tortilla. Roll tightly and place seam-side down in a greased baking dish. Repeat with remaining tortillas.

Assembling

  • Pour enchilada sauce over rolled tortillas, covering them completely. Sprinkle shredded cheese on top.

Baking

  • Preheat oven to 350°F (175°C) and bake enchiladas for 20 minutes until cheese is melted and bubbly.

Serving

  • Let the dish sit for a few minutes before serving. Top with sour cream, fresh cilantro, sliced jalapeños, or avocado if desired.

Notes

For a spicier version, add diced jalapeños to the filling. These enchiladas can also be made ahead of time, stored in the fridge, and baked just before serving.
