  • 4 cups chicken broth

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Preparation

  • Prep your workspace and ingredients. Gather and chop all the vegetables and shred the chicken.
  • In a large pot, heat a drizzle of olive oil over medium heat.
  • Add diced carrots, celery, and onion to the pot. Sauté for 5-7 minutes until they begin to soften.
  • Add minced garlic, dried thyme, and rosemary. Cook for about a minute until fragrant.
  • Pour in the chicken broth and stir. Bring the mixture to a gentle boil, about 5 minutes.
  • Add the gnocchi and cook according to package instructions (about 2-5 minutes).
  • Add the cooked shredded chicken and heavy cream. Stir and let simmer for about 5 minutes.
  • Taste the soup, and add salt and pepper to your liking.
  • Serve hot with optional accompaniments like bread or parmesan.

Notes

For best results, avoid overcooking the gnocchi. Consider adding fresh herbs before serving for added flavor. This recipe can easily be customized with different vegetables or spices.
