For the Pizza Pockets

  • 1 pound pizza dough Can substitute with gluten-free pizza dough.
  • 1/2 cup pizza sauce Alternative sauces can be used such as pesto or barbecue.
  • 1 cup shredded mozzarella cheese Other cheese options like cheddar or provolone can be added.
  • 1/2 cup additional fillings Such as pepperoni, cooked sausage, or chopped veggies.
  • 1 large egg, beaten For egg wash.
  • 1/2 teaspoon Italian seasoning Optional, for added flavor.
  • 1 tablespoon grated Parmesan cheese Optional, for topping.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out your pizza dough to about 1/8 inch thick.
  • Cut the rolled-out dough into 8 rectangles.
  • On one half of each rectangle, spread about 1 tablespoon of pizza sauce.
  • Sprinkle a generous amount of shredded mozzarella cheese over the sauce.
  • Top the cheese with your choice of additional fillings.
  • Fold the other half of the dough over the filling to create a pocket, pressing edges together firmly.
  • Crimp the edges with a fork to ensure they are sealed.
  • Brush the tops of each pocket with the beaten egg and sprinkle with grated Parmesan cheese if desired.

Baking

  • Bake in the preheated oven for 12-15 minutes, until golden brown and filling is hot.

Notes

Store cooked pizza pockets in an airtight container in the refrigerator for up to 3 days. They can also be frozen for later use. For freezing, wrap each pocket individually and place in a freezer-safe bag.
