  • 1/4 cup pizza sauce
  • 1/2 cup shredded mozzarella cheese Consider part-skim for a healthier option.
  • 1/4 cup sliced pepperoni Can be substituted with vegetables or a meat alternative.

Instructions
 

Preparation

  • Gather all your ingredients and preheat your oven to 375°F (190°C).
  • Combine 1 cup of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt in a mixing bowl and stir well.
  • Add 1/2 cup of whole milk into the dry mixture and stir until the batter is smooth.
  • Grease a muffin pan or line with cupcake liners and spoon the batter into the muffin cups until they are halfway full.

Baking

  • Top each filled cup with a spoonful of pizza sauce, followed by a generous sprinkle of shredded mozzarella cheese, and add a few slices of pepperoni.
  • Bake in the preheated oven for 15 minutes or until the tops are golden and a toothpick inserted comes out clean.

Serving

  • Remove the muffin pan from the oven and let it cool for a few minutes before serving.
  • Serve warm, optionally with extra pizza sauce for dipping.

Notes

Allow leftovers to cool completely before storing in an airtight container. Can be reheated in the microwave for 20-30 seconds.
