Pastry and Filling Ingredients

  • 1 package puff pastry dough store-bought works great
  • 1 cup shredded cheese cheddar, mozzarella, or your favorite variety
  • 1 cup diced ham pre-cooked or leftover ham is ideal

For Egg Wash and Seasoning

  • 1 large egg for egg wash
  • to taste salt
  • to taste pepper
  • optional herbs or spices for additional flavor (like garlic powder, parsley, or chili flakes)

Preparation

  • Gather all your ingredients. Dice the ham if it’s not pre-diced and set aside. Pre-shred your cheese if you’re not using pre-packaged shredded cheese.
  • Preheat your oven to 400°F (200°C).

Making the Bites

  • Unroll the puff pastry dough onto a lightly floured surface and roll it out slightly.
  • Slice the puff pastry into small squares, about 2-3 inches in size.
  • In a mixing bowl, combine the diced ham and shredded cheese. Add salt, pepper, and any optional herbs or spices.

Filling and Baking

  • Place a spoonful of the ham and cheese mixture in the center of each pastry square.
  • Fold the corners of each pastry square over the filling to form a pocket and pinch the edges together to seal them. Optionally, press down with a fork.
  • In a small bowl, beat the egg and brush it onto the tops of the pastry bites.
  • Place the filled pastries on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown.
  • Allow the bites to cool slightly before serving.

Notes

These bites are great for dipping into sauces like honey mustard or BBQ. They can be customized with different ingredients based on dietary needs!
