  • 1 cup mixed vegetables (carrots, bell peppers, spinach) Chopped into small pieces
  • 1 cup shredded cheese (cheddar, mozzarella)
  • 1/2 cup cream cheese

Wrapper Ingredients

  • 1 package spring roll wrappers
  • 1 tablespoon olive oil For brushing
  • Salt To taste
  • Pepper To taste

Preparation

  • Start by washing and chopping the mixed vegetables into small, equal-sized pieces.
  • In a mixing bowl, combine the chopped vegetables, shredded cheese, and cream cheese. Season with salt and pepper.

Assembly

  • Lay one spring roll wrapper flat, with one corner pointing towards you.
  • Place a spoonful of the vegetable mixture at the bottom edge of the wrapper.
  • Fold the bottom corner over the filling, fold the sides inwards, and roll it tightly from the bottom up.
  • Seal the top edge with a small amount of water.

Baking

  • Place rolled wrappers seam-side down on a baking sheet lined with parchment paper.
  • Brush the tops with olive oil.
  • Preheat the oven to 375°F (190°C) and bake for 20-25 minutes or until golden brown.

Serving

  • Let the rolls cool slightly before serving with your favorite dipping sauce.
