For the bundles

  • 10 oz fresh green beans, trimmed
  • 2 oz cream cheese, softened
  • 2 oz shredded cheddar cheese
  • 1 clove garlic, minced
  • 1 tbsp fresh chives, finely chopped (optional) Optional for garnish
  • 1/4 tsp black pepper
  • 6 slices thin-cut bacon
  • 1 tbsp olive oil
  • 1 tbsp brown sugar
  • 1/2 tsp smoked paprika

Preparation

  • Start by gathering and washing all your ingredients. Trim the green beans and get your cheeses and spices ready for smooth mixing.
  • Bring water to a boil and add a pinch of salt. Blanch the green beans for 2 to 3 minutes until they are vibrant and slightly tender.
  • Transfer the blanched green beans to an ice bath for a few minutes. This halts the cooking process and keeps them crisp. Drain and pat dry thoroughly.
  • In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, minced garlic, black pepper, and chives (if using). Mix until smooth and creamy.

Assembly

  • Stretch each slice of bacon slightly before assembling to ensure a better wrap.
  • Divide the green beans into six equal portions. On each slice of bacon, spread a layer of cheese mixture, then place a portion of green beans at one end and roll it up tightly, seam-side down.
  • In a small bowl, whisk together olive oil, brown sugar, and smoked paprika to create a glaze.
  • Brush the glaze over each bacon bundle with a pastry brush.

Cooking

  • Preheat the oven to 400°F (200°C). Bake the bacon bundles for 22 to 25 minutes, until the bacon is crispy and the cheese is bubbling.
  • For an extra crispy finish, broil the bundles for 1 to 2 minutes, watching carefully to avoid burning. Let the bundles rest for 3 to 5 minutes before serving.

Notes

These bundles can be prepared in advance and stored in the refrigerator until ready to bake. Serve them as an appetizer, side dish, or light main course.
