  • 2 cups elbow macaroni Cook until al dente
  • 1 cup sharp cheddar cheese, shredded Use extra for garnish if desired
  • 1 cup sour cream Can substitute with Greek yogurt
  • 1/2 cup mayonnaise Can omit or substitute with yogurt

Vegetables and Seasoning

  • 1/2 cup celery, diced Fresh for best texture
  • 1/4 cup red onion, diced Mild flavor
  • 1/4 cup green bell pepper, diced Can substitute with other bell peppers
  • 1 tablespoon Dijon mustard For flavor enhancement
  • to taste N/A Salt and pepper Season according to preference

Instructions
 

Preparation

  • Gather all ingredients and measure out the macaroni, shred the cheese, and dice the vegetables.
  • In a large pot, bring salted water to a boil, add macaroni and cook for 7-8 minutes until tender but al dente. Drain and rinse under cold water.

Dressing

  • In a large mixing bowl, combine sour cream and mayonnaise. Stir until smooth.
  • Add Dijon mustard, salt, and pepper, and mix thoroughly.

Combine

  • Once macaroni has cooled, gently fold it into the dressing mixture.
  • Fold in the shredded cheddar cheese and diced vegetables until evenly distributed.

Chill and Serve

  • Taste and adjust seasoning as necessary, then cover and refrigerate for at least one hour before serving.
  • Serve chilled, garnished with extra cheddar or vegetables if desired.

Notes

This macaroni salad is great for potlucks and can be customized with added proteins or vegetables to taste.
