  • 1 teaspoon baking soda

  • 2 teaspoons ground cinnamon
  • 1 cup grated carrots
  • 1 cup toasted pecans

For the cream cheese icing

  • 1/2 cup cream cheese Room temperature.
  • 1 cup powdered sugar

Preparation

  • Begin by gathering all your ingredients and measuring out your flour, sugars, and spices.
  • Melt the butter in a saucepan over medium heat, stirring continuously until it starts to brown (about 5-7 minutes).
  • Transfer the slightly cooled butter to a large mixing bowl. Add in the brown and granulated sugars, mixing until smooth.
  • Crack in the eggs and add the vanilla extract, stirring until the mixture is well combined.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.

Mixing

  • Gradually add the dry ingredients to the wet mixture, being careful not to overmix.
  • Fold in the grated carrots and toasted pecans until evenly distributed.

Baking

  • Drop spoonfuls of the cookie dough onto a prepared baking sheet, leaving space between each cookie.
